Puff pastry with asparagus, brie, Portugese cheese and thyme

1 sheet puff pastry
1 bunch asparagus
Portuguese cheese (or any other cheese you have in the fridge)
1 tbsps extra virgin olive oil
fresh thyme
1 egg, beaten

  1. Preheat the oven to 190ºC. Line a bake tin with baking paper.
  2. Toss together the asparagus, pepper, salt and fresh thyme.
  3. Cut the puff pastry in 6 squares. Place a piece of brie and Portuguese cheese (or any other you have in your fridge) and then add a handful of asparagus.
  4. Take two corners of the puff pastry and wrap up and over the cheese and the asparagus to enclose.
  5. Put it on a baking tin. Brush each pastry with beaten egg.
  6. Bake for 20-25 minutes or until golden brown.
