Chocolate cake with pears


A simple chocolate cake with pears coated with melted dark chocolate, just right for cool autumn evenings.

INGREDIENTS (chocolate cake):
250g unsalted butter, in a room temperature
160g sugar
4 eggs
100g dark chocolate, melted
250g flour
1 tsp baking powder
1 tsp cinnamon
25g cacao powder
80g oat milk
6 large pears
pinch of salt

  1. Preheat the oven to 180°C.
  2. Mix the butter and sugar for about 3 minutes in a large bowl.
  3. Add the eggs, one by one. Mix on a low speed. 
  4. Add melted but not hot chocolate and mix well.
  5. In a separate bowl mix dry ingredients: flour, baking powder, cinnamon, cacao powder and a pinch of salt.
  6. Add one-third of the dry ingredients to the chocolate mixture and mix on low speed until combined. Repeat the process. 
  7. Pour the milk and mix.
  8. Line the springform cake tin (24cm) with a baking paper. Pour in the chocolate cake mixture and arrange the pears into the cake.
  9. Bake for 1 hour or up to the so-called dry stick in 180°C.

INGREDIENTS (chocolate ganache):

100g dark chocolate (70% cacao)
25g unsalted butter
pinch of salt
1 tsp vanilla extract
50g oat milk

  1. Melt the chocolate and the butter. Stir in the milk, vanilla extract, add a pinch of salt and mix it well.
  2. Pour the chocolate ganache over the cake. Let it cool.
