Brownie cookies with pistachios


INGREDIENTS (18 pieces)

60g butter
200g dark chocolate 
2 eggs in the room temperature
150g sugar
50g wheat flour
1/4 tsp baking powder
1 tsp coffee extract
50g salted pistachios

  1. Put the chopped butter in a pot and heat it over low heat. When it is half melted, add 150g of chopped chocolate and melt while stirring. Remove from fire.
  2. Preheat the oven to 180°C. Beat the eggs with sugar for about 5-7 minutes until fluffy (yolk stirred with sugar to a cream). Add 1 teaspoon of coffee extract (I used this one).
  3. Add the chocolate mass to them and mix until homogeneous. Pour in the flour and baking powder and mix again.
  4. Add the rest of the diced chocolate (50g) and the chopped salted pistachios. Stir and put in the freezer for 10 minutes.
  5. Line a large tray with baking paper.
  6. Take a spoonful of chocolate mass and put it on the tray with keeping the space between each cookie. Bake for 10 minutes. When taking them out of the oven, the cookies should be soft inside.
