Blueberry muffins with white chocolate and cardamom

I have already named them one of my favourites. Cardamom aftertaste, delicate lime, white chocolate hiding at the bottom of the muffin cases. And all this topped with lime icing, which refreshes the taste of cupcakes and decorated with blueberries.




INGREDIENTS FOR 12 MUFFINS:
170 ml sunflower oil
225g wheat flour
1 tsp of baking powder
half a teaspoon of salt
190g of fine sugar for baking
2 medium-sized eggs
150 ml of milk
juice and zest of one lime
100g blueberries
100g white chocolate
1 tsp of cardamom


  1. All ingredients should be at room temperature.
  2. Mix the dry ingredients in one bowl: flour, baking powder, salt, sugar, cardamom.
  3. Mix the wet ingredients in the second bowl: eggs, milk, sunflower oil, juice and zest of lime.
  4. Combine both mixtures, mix quickly to combine ingredients (do not mix too long and do not mix, use for example a wooden spatula).
  5. Chopp white chocolate. Add blueberry and white chocolate to the mixture. Mix gently.
  6. Line the muffin tin with muffin cases. Partition the dough between muffin cases - it should fill them up to 3/4 of their height.
  7. Bake for about 20-25 minutes at 190ºC without the airflow, until the so-called dry stick. Take out and cool on the grill.

LIME FROSTING:
3 tbs icing sugar
1-2 tbs of lime juice
Mix the ingredients with a whisk until smooth. You can control its density with lime juice or by adding the icing sugar. If you want the icing to be denser, add less juice. If you like more liquid icing, add more juice.

Decorate muffins with lime frosting, blueberries and lime zest.
