Cookies with apples and fudge

 


A few weeks ago I had a wedding meeting with a future couple. We went together for a leisurely walk through the garden path. We found a tree with good baking apples. Heather took two from me. And so they were lying in my kitchen, in a basket and waiting ...


INGREDIENTS (about 14 cookies):

100g of unsalted butter, in a room temperature

6 fudge candies

1 apple (peeled)

1 tsp cornflour

2 tsp cinnamon

1/2 cup powdered sugar

1 egg, in a room temperature

220g wheat flour

1/2 tsp baking soda

1/4 tsp baking powder


  1. Line a large tray with baking paper. Preheat the oven to 180°C.
  2. Cut the fudges and the peeled apple into very small cubes. Sprinkle apple pieces with cornflour and 1 teaspoon of cinnamon, mix.
  3. Beat the butter into a light cream with powdered sugar (about 5 minutes). Add the egg and beat for about 3 minutes.
  4. Pour the flour into a separate bowl, add baking soda, baking powder, 1 teaspoon of cinnamon and mix. Pour into the beaten mass and mix with a spatula. Add the fudge with apples and mix again.
  5. Scoop a spoonful of mass and form balls. Put them on a prepared baking tray and flatten them slightly.
  6. Put into the preheated oven and bake for about 13 - 14 minutes.
